Creating a Championship in Single Player

So I took a bunch of time to create a Championship in Single Player copying the TCR schedule of 2019... I got everything exactly like I wanted, and exited the game... Later on I went back in to the game to start the first leg to see that my entire schedule is gone... I was never prompted to save the Championship, what did I do wrong? Or did the Developers think we were going to do our 6 Stage Championship in one sitting?

Is there a way to restart a season, so I can replay it again? Or do I have to set it up from scratch every time?

Yes, you have to set it up again. Apart from the tracks, the menu should save the settings of your last championship, though.
